(NYT27) CANTON, Mass. -- Feb. 12, 2005 -- TRANSFAT-DANGERS-3 -- Michael O'Donovan, vice president of global research and development for Dunkin' Donuts, in the test kitchen at the company's headquarters, with blueberry muffins (trans fat free), in Canton, Mass., Feb. 1, 2005. Scientists contend that trans fat, a component of the oil, is more dangerous than the fat it replaced. Replacing it with healthier oils might prevent as many as 100,000 cardiac deaths a year, and a small but growing body of research has connected it to metabolic problems.
