(NYT25) CALDWELL, Idaho -- Feb. 12, 2005 -- TRANSFAT-DANGERS -- Regular fries coming out of the fryer at the J.R. Simplot Company plant -- a supplier to McDonald's -- in Caldwell, Idaho, in Feb. 2005. At J.R. Simplot, oil with trans fat is a staple. The company sells French Fries without it, but they cost more. Scientists contend that trans fat, a component of the oil, is more dangerous than the fat it replaced. Replacing it with healthier oils might prevent as many as 100,000 cardiac deaths a year, and a small but growing body of research has connected it to metabolic problems.
