(NYT1) CHICAGO -- Aug. 20, 2002 -- GIRARDET-CUISINE -- Fredy Girardet, 66, a Michelin three-star chef widely considered one of the culinary giants of the 20th century, called it quits in November, 1996, and sold his restaurant, Girardet in Switzerland. He says he still feels somewhat equivocal about a decision that surprised the world of haute cuisine. Last week, Girardet happily came to the United States to cook dinner on Saturday night in honor of the 15th anniversary of Charlie Trotter's restaurant, in Chicago. And like pilgrims, dozens of Girardet regulars traveled from New York, Washington, Los Angeles and even Australia to have dinner.
