Local restaurant, in Kara, Togo, December 4, 2024. A group of young girls pound yam to prepare fufu or foufou. The peeled yam pieces are cooked in water until they become soft. Once cooked, the yam pieces are removed from the water. Then, girls and women pound the cooked yam pieces and crush them by using a pestle and mortar. The yam is pounded until it obtains a smooth and homogeneous paste. During this phase, hot water is sometimes used in the preparation to obtain the desired consistency. Once obtained a porridge of pounded yam, the Foufou can be served and accompanied by various sauces. Yam is the common name for some plant species in the genus Dioscorea that form edible tubers.
