Some cheese makers have not had such a peripatetic life. For years, Carolyn and her husband Joe Hillman, worked Hillman Farm in Colrain, Mass., struggling to get by. With more Americans appreciating, and willing to pay for, grass-fed beef and heirloom fruits and vegetables, artisanal cheese making has also blossomed.
