(NYT18) NEW YORK -- September 9, 2003 -- MASTER-CHEF -- In 1979, Rebecca Charles worked as a chef at the Whistling Oyster in Ogunquit in Maine, and later at the White Barn Inn in Kennebunkport, but by 1987 had tired of the seasonality game. In 1997, she opened Pearl Oyster Bar in Manhattan. With a small knife to julienne and a larger chef's knife to chop, Charles makes quick work of red peppers, onions, tomatoes and cucumbers on Aug. 15, 2003 at Pearl Oyster Bar.
