Fully grown after 35 days the crickets in each crate are emptied and sorted. After which they will be weighed, bagged and then frozen before being turned in to flour. Cricket Lab began operation in 2018 and produces high quality cricket flour by the ton in its modern facility in Chiang Mai Province of Northern Thailand. The farm breeds the crickets themselves from eggs and grows them in plastic crates which are part of a 6m high vertical farming system. In this highly controlled environment where the crickets are kept in the dark, the company is able to meet European and US health and safety standards and export their product to western markets.
