This photograph shows oak tree trunks in front of staves drying in the seasoning yards at the Tonnellerie Baron, a French cooperage founded in 1875 and maintaining the historic craft of coopering, near the town of Saintes, southwestern France, on March 20, 2024. With the process of making barrels and other oak casks for wine and spirits vinification and ageing starting with sourcing the finest oak trees from public and private forests, in 2018 Tonnellerie Baron started to replant 1 oak for each barrel we produced, or about 15 000 trees per year.
